I'm not sure a standard for this is really necessary, or even desireable in some cases. It all comes under the category of rules writing and clarity, but the exact wording is often dictated by the game itself. For example, if I designed a game in which the coins represented soldiers, I would define the correlation once, and then refer to coins as soldiers for the remainder of the rules. I can also think of cases where I would specifically want to use the suit identification, and I can think of others in which I would use color instead. All of these cases are ones in which the game theme is the determining factor in how coins are refered to.
Having said all that, I can still understand the desire for a standard way of refering coins in initial "components list" section of rules for a game.
